Apparatus Room

The Apparatus Room is what happens when a city keeps its history and hires a great kitchen. It's the ground floor of the Foundation Hotel — Detroit's 1929 fire department headquarters — right where the fire trucks used to park, now serving New American cooking with a French accent from breakfast through dinner. The kitchen has won its share of awards, the menu runs from a smashburger to Michigan heritage pork, and the room itself — soaring ceilings, glossy tile, firehouse bones — is half the reason people go. The whole operation even got a top-to-bottom refresh in early 2025. Sitting directly across from Huntington Place, it absorbs convention crowds daily and, by all accounts, still holds the line.

Now, the restrooms. Here's the thing about a design-forward boutique hotel that made Condé Nast's best-new-hotels list: the restrooms are part of the product. Guests repeatedly describe the property as spotless, and that standard doesn't stop at the dining room door. Expect the hotel-restaurant treatment — kept up, calm, the kind of restroom where you can regroup mid-dinner without bracing yourself first. In a downtown where plenty of options make you earn it, this is one of the safest bets around, and one of the few where the restroom matches the price tag on the menu.
